I love a good hearty and rich beef stew on a weeknight to feed the family! I have even made this beef stew for a Christmas party to feed friends! This easy beef stew doesn’t feel like you are just feeding a simple soup, since it has good hearty chunks of beef in it.
But it can be tricky to cook stew meat without it getting tough, especially when it can’t cook low and slow all day! So let me show you how!

Ingredients
¼ cup all-purpose flour
¼ teaspoon freshly ground pepper
1 pound beef stewing meat, trimmed and cut into inch cubes
5 teaspoons butter or avocado oil
3½ cups beef broth, homemade or boxed or one box of beef broth
2 bay leaves
1 medium onion, peeled and chopped
5 medium carrots, peeled and cut into ¼-inch rounds
4 or 5 stalks of celery
2 large baking potatoes, peeled and cut into ¾-inch cubes
2 teaspoons salt

1 large pot or dutch oven
1 large mixing bowl

How to make Easy, Weeknight, Beef Stew
- Step 1: In the large bowl, mix the flour and pepper. Add the cut beef tips and coat with flour.
- Step 2: In the large pot, heat 3 teaspoons of oil. Add a few beef pieces at a time to the pot. Cook and turn the pieces until they are browned on each side. Continue the step until all the beef is fully cooked.
- Step 3: Add the beef, beef broth, and bay leaves to the pot. Bring to a boil, then simmer. Cover and cook for 1.5 hours, or until the beef is tender.
- Step 4: Simmer the beef, beef broth, and bay leaves. In a separate cast-iron pan or skillet, saute the onions, celery, and carrots until almost tender. They will finish softening as they simmer with potatoes in the next step.
- Step 5: After the beef has cooked, add the potatoes, onions, celery, and carrots and cook for 30 minutes, or until vegetables are tender.
- Step 6: Season stew with salt & pepper to taste. Serve and enjoy!



Recipe FAQ’s
Can you freeze the stew?
Yes you can, but I would leave out the potatoes if you plan to freeze the soup. Potatoes do not thaw well.
